Christmas Trad. Pinnekjøtt (Dried mutton ribs).


Pinnekjøtt (literally “stick meat”) or Dried mutton ribs is a traditional Christmas dish in the western parts of Norway. Pinnekjøtt is salted, dried and sometimes smoked lamb’s ribs which are re hydrated, usually 12-24 hours in pure water and then steamed, usually, but not necessarily, over birch branches, and served with potato and mashed rutabaga. Traditionally, beer and aquavit are served with pinnekjøtt, but it has become increasingly popular to drink red wine instead, perhaps since wine is becoming more popular in general.

    This reminds me of a large piece of mutton that was purchased by a friend at a seafood/meat market that we were at. He was quite glad to get mutton at that time. The pieces shown here look somewhat similar to Korean barbecue ribs, but these are thicker.

    Gosh! I miss all these wondrous Norwegian food. I lived in Oslo for sometime so many years ago. Except for my complete set of aquavit glasses and other Norwegian mementos which I still hold on very dearly, maybe I would never have the chance of losing myself into the Norwegian way of living ever again.

    I love lamb any way it is served. Pinnekjøtt is just as wonderful as it sounds. I had the pleaseure of being served this dish while visiting Danish friends of the ex way back in 1987. I knew nothing about wine then. I can just imagine how much better it would have been with a nice bottle of Bordeaux. I guess I’ll just have to Google up a recipe.
